These are one of our go-to desserts for a multitude of reasons: they’re 3-ingredients, taste incredible and look so fancy they’ll impress all your guests. The tang of the passion fruit contrasts with the sweet of the mango and cream, and that crunch of the brandy snaps gives such a brilliant texture. You’ll be hard pressed to find something you don’t like about these.
(Disclaimer: brandy snaps don’t actually contain any brandy)
- 1x packet of @foxsbiscuits brandy snaps
- 150ml Double Cream, whipped into soft peaks
- Mango & Passionfruit coulis (our favourite is by @sainsburys or @tescofood )
- Fresh Mango pieces
- Icing sugar to dust
1) Whip the cream into soft peaks and pipe into each brandy snap
2) Top with mango pieces, drizzle with coulis and dust with icing sugar. Serve immediately.
