Chicken Kofta Curry- Chicken Meatballs

Kofta are traditionally made with lamb mince. However, we prefer chicken and ever since a young age, this has been a comfort food. It is a dish perfectly paired with simple, boiled rice or a fresh chapatti.

To make this dish, there are 2 elements- meatballs and curry- which are initially prepared separately and then brought together towards the end.

Serves 6:⠀

Ingredients:
For the curry:⠀

  • 2 white onions, sliced thinly
  • 1 spring onion, sliced into thin rounds
  • 3 medium-sized tomatoes
  • salt to taste (approx.1 tsp)
  • red chilli powder
  • 1 heaped tsp cumin powder
  • 1heaped tsp coriander powder
  • 1/2 tsp turmeric powder
  • 2tsp ginger garlic paste

For the Meatballs:

  • 1kg chicken mince
  • 2 brown onions, halved and quartered
  • 1tsp salt
  • 1 or 2 whole green chillies
  • 2tsp cumin powder
  • 2tso coriander powders
  • 2tbsp gram flour

Method:

Curry:

  1. Sauté the onions in a little oil until the white onions are soft and golden brown. ⠀
  2. Chop the tomatoes into small pieces and add to the onions, alongside salt, spices and ginger garlic paste. Cover with a lid and cook on low heat until the tomatoes soften completely and oil begins to separate: it will come to the top. Be sure to check the pan and mix occasionally to ensure it doesn’t stick.⠀

Meatballs:⠀
Whilst the curry is cooking:⠀

  1. Blitz all the meatball ingredients in a food processor until it binds together.⠀
  2. Make ping-pong sized ball with the mince mixture and shallow fry in a pan, on medium heat until the outsides are golden brown. (Approx.5 minutes). Remove from oil and place them on a kitchen towel to drain.⠀

Assembling:⠀

  1. Once the curry is cooked, give it a good mix and carefully place the fried meatballs into the pan with 1/2 a cup water. Cover with a lid and cook on low heat for 15 minutes.⠀
  2. Remove from heat, sprinkle with fresh coriander and serve with chapatti or rice

Top Tips:
– Don’t mix the curry once the meatballs are in the pan as they will break: simply swivel the pan delicately
– Optional: After the dish is cooked (Assembling, Step 1), open the lid and crack a few eggs on top. Cover again and leave to cook for an additional 5 minutes.⠀
